The Ingredients
- 250 gms bitter gourd (karela or kakarakaya or bitter melon) – tender and fresh
- 5 tablespoons extra virgin olive oil.
- ½ Turmeric
- ½ Kashmiri Chilli Powder
- ½ Corriander Powder
- 1 tsp Cumin Powder
- ½ black pepper
- 1 tsp Salt
- Green Coriander – (A little) Fresh cilantro washed, rinsed & finely chopped
Variation: Got no time, or no fresh coriander leaves? "Cilantro” is the Spanish name for coriander leaves. Use a 6 ounce jar of prepared coriander instead.
The Preparation

Add Bitter Gourd or Karela:
- Wash and cut the bitter gourds into slices of medium thickness.
- Add Olive Oil to it.
- Add bitter gourd slices.
- Add in salt, turmeric powder, red chili powder, cumin powder, coriander powder. Saute:
- Saute Bitter gourd for about 10 mins. Mix:
- Mix well and stir fry karela for 5 mins. Black Pepper:
- Lastly add black pepper powder and mix well.
- Put lid. Note:
- Don’t cover the lid totally. Note: (if you close the lid the dish will be watery).
- Mix in between.
- Cook for 10 - 15 minutes
- Saute for a few seconds and then turn off the stove. Add Cilantro:
- Garnish with some chopped coriander and serve the Crispy karela fry recipe hot and nice with some roti or rice.
- The dish is ready.

Please Note: Don't add any water. The moisture is enough from the Bitter Gourd or Karela. Need that tender from Karela. Otherwise Karela Fry is too soft. You want that tender.
